Anodised aluminium conducts heat faster and more evenly than steel, which means a flatter top and less of the domed, cracked crust you get when the edges set before the middle. The loose base lifts a cake out without inverting it.

Care and cleaning
- Hand wash. Dishwasher detergent strips the anodised layer and leaves aluminium dull and chalky.
- Line the base with parchment rather than relying on grease alone; anodised is smooth but it is not non stick.
- Do not cut inside the tin.
