Orders placed before 2pm Mountain Time on a business day are dispatched the next business day. From there it is three to six business days to the contiguous United States, five to nine to Alaska and Hawaii. Every parcel is tracked and you get the number by email the moment it leaves us.

Every tin on this site states its interior dimensions and its batter capacity in millilitres. Most recipes are written for a specific volume even when they only name a diameter, so compare the capacity rather than the width. If a recipe gives neither, send it to us and we will work it out.

You have 35 days from delivery to send anything back, unused and in its box, for a full refund or an exchange. We email you a prepaid return label, so it costs you nothing, and there is no restocking fee and no need to give a reason.

Only if it has not been floured. Once rattan has flour worked into it there is no way to bring it back to a saleable condition, so please decide on round or oval, and on the size, before you dust it. If one arrives damaged that is a different matter and we replace it from a photograph.

Because rattan absorbs water and then grows mould from the inside, where you cannot see it. Let it dry completely after every use, then brush the flour out with a stiff dry brush. If it ever smells musty, ten minutes in a 100 C oven will fix it. The linen liner can be machine washed.

The stainless items, the silicone and the palette knives are. Nothing with a non stick coating, nothing wooden, nothing marble and nothing copper should ever go in one. Dishwasher detergent is alkaline and it is what strips non stick, dulls anodising and takes the tin lining off copper. The care section on each product page says which is which.

Because they are solid copper with a tin lining, and copper is the only material that pulls heat into the batter fast enough to caramelise the outside while the centre stays custard. Silicone and steel cannot do it, which is why canele made in them come out pale and uniform. They are the most expensive thing we sell and they will outlast the oven.

Anodised for cakes you want a flat top on, because aluminium conducts faster and the edges do not set before the middle. Non stick for anything shaped, like a madeleine tray or a loaf tin, where release matters more than conduction. Neither should go in a dishwasher.
