Twenty three centimetres with a silicone gasket where the base meets the ring, which is the difference between a springform you can bake a cheesecake in and one you cannot. Most springforms leak a thin batter down the seam. This one seals, so a water bath stays outside the tin.
Features
- Silicone gasket at the base seam, holds a thin batter
- Suitable for a cheesecake in a water bath
- 23 cm ring, about 2 L of batter
- Base is flat with no lip, a cake slides straight off
- Clip tension is adjustable if the seal ever loosens
- Carbon steel with a non stick coating
