One piece of beech, tapered from the centre to each end, with no handles and no bearings. The taper is what lets you steer: pressing one end turns the sheet, which is how you keep a circle round without picking the pastry up. It also means you feel the dough through the pin instead of through a mechanism.

- No handles or bearings, you feel the dough directly
