Marble stays cold, and cold is the only thing that stops butter melting into a pastry before it reaches the oven. Put it in the fridge for twenty minutes before you roll a puff or a shortcrust and the layers survive. It is heavy, at two point one kilos, so the weight does most of the work.

Care and cleaning
- Wipe with a damp cloth and dry. Do not soak, and never put marble in a dishwasher.
- Keep lemon juice and vinegar off it. Acid etches polished marble and the mark does not come out.
- Chill it in a fridge, not a freezer; a sudden temperature swing can crack stone.
