A flat loop of heavy wire on a beech handle. It looks wrong and it is the right tool: the open loops cut through a wet dough instead of packing it, so a sticky ninety per cent hydration mix comes together in about thirty seconds without a single pocket of dry flour, and without the dough climbing the wires the way it does on a balloon whisk.
