Aluminium punched with two millimetre holes across the whole surface. The holes let steam escape from underneath whatever you are baking, which is why a perforated sheet gives a crisp base where a solid one gives a pale, slightly damp one. It is the correct sheet for bread, choux and the tart rings above.

Care and cleaning
- Hand wash. Dishwasher detergent turns bare aluminium chalky and grey.
- Bake on parchment or a mesh mat if you are worried about sticking; there is no coating here.
- Aluminium darkens with use. It is cosmetic and it actually bakes slightly better once it has.
